Braised shank with bitter beer

Braised shank with bitter beer, served with sautéed potatoes

: 4 salted ham, ½ l blond beer (preferably from Alsace!), 5cl picon beer or bitter beer, 5cl lemon syrup, ½ l beef broth, 900 g Monalisa type potatoes, 50 g butter, salt , pepper.

For 4 people
Baking : 2h30.

Blanch the ham: cover them with cold water, bring to the boil, cool and clean (remove the scum). Brown them with 25 g of butter and when they are well colored, deglaze with the beer, reduce by half. Add the bitter beer, lemon syrup and beef broth. Bake (170 ° rotating heat) for about 2h30, basting regularly. Cook the potatoes in their field dresses, peel them, cut them into slices and brown them in butter, adjust the seasoning (salt, pepper) and serve.
