Sauerkraut (Sürkrüt)

Sour cabbage, sauerkraut is fermented minced cabbage. Alsace covers 75% of French production. Garnished sauerkraut: sauerkraut cooked in white wine with an assortment of salted and smoked meats, cold cuts and potatoes. Pork is most often used, but also goose or various fish.
