Black pudding with apple sauce (Blüetwurscht)
Ingredients : 4 black puddings of 180 to 200 g, 2 Jonagoldred type apples (not too acidic, not too floury), 900 g Monalisa type potatoes, 50 g butter, 1 onion, ½ l beef broth, salt, pepper. For decoration: crushed tomato, parsley.

Cook the potatoes in field dresses, peel them, cut them into slices and brown them in butter. Scald the sausages 1min. Peel the fruit apples, cut them into 6, stew them with butter. Brown the sausages in butter over low heat then set them aside, deglaze the pan with the beef broth, reduce. Whisk in butter, that is to say, incorporate patches of butter to thicken the sauce. Brown the sliced onions. Arrange the hot blood sausages and applesauce, cover the sauce, sprinkle with the onions, serve with sautéed potatoes (and possibly a green salad).
